This past week I have been posting recipes from my parents visit. Today is no different. Over the weekend my Dad and I barbecued and my Mom made all of the sides. One of the best was the German Potato salad. My Mom made this and I had to have the recipe. Of all of the sides that we had, it was the first of all of the side to be completely eaten.Â
A warm potato salad? You betcha! It was awesome!
German Potato Salad – (Thanks Mom)
- 2 cans Reads German Potato Salad
- 1 can sliced potato – drained
- 6 slices bacon – crispy
- 1 tbs dried onion
The first step is to cut up the 6 slices of bacon into strips and then fry it up until crisp. Remove the bacon from the pan and let it drain on a paper towel.
Open up the cans of german potato salad and sliced potatoes.Â
Drain the sliced potatoes. Place all of the potatoes into a large oven safe dish.
Next layer on the bacon and the dried onions.
Bake at 325 degrees for 3 hours.
I know that this uses a can of german potato salad as the base, but it is amazing. You have to give it a try.

Jay, I agree that the time seems like a lot, but that is how my mother makes it.
I’ve searched and searched but I can’t find any canned potato salad.
I usually get it at walmart. If you can’t , you can order it online from Amazon.
