I was walking through the mall the other day when a random lady ran up to me and offered me some bourbon chicken. I usually do not take random food from strangers, but she looked like she worked at the restaurant at the food court so that was good enough for me. Â I am glad that I did, it was delicious. Â So much so that I had to remake it. Â So I scoured the internet for recipes. Â I finally found one that looked good, but it was missing the main ingredient, Bourbon. Â So I added it to the recipe and the rest is history. Â It was an amazing meal.
Bourbon Chicken – (Adapted from Bourbon Chicken)
- 1 1/2 – 2 pounds chicken breast, cubed
- 2 tbs olive oil
- 1 clove garlic
- 1/4 tsp ginger
- 1/2 tsp red pepper flake (optional)
- 1/4 cup apple juice
- 1 tbs cider vinegar
- 1/4 cup water
- 1/3 cup soy sauce
- 1/3 cup light brown sugar
- 1/4 cup bourbon
- 2 tbs ketchup
Heat the oil in a large skillet over medium/high heat.
Add the chicken and cook till lightly browned. Â Then remove the chicken from the pan.
In a medium bowl, combine the remaining ingredients to form a sauce. Â Whisk together.
Add the sauce mixture to the pan and bring to a boil. Â Mix thoroughly to make sure that all of the ingredients are mixed into the sauce.
Add the chicken to the pan and bring back to a boil.
Reduce the heat and simmer for 20-25 minutes or until the sauce reduces and thickens.
Serve over rice and enjoy!
