My son is a huge pizza fan. His favorite place of all time is Stevi B’s pizza buffet. I know what you are thinking, but I am pretty sure that he loves it more for the arcade than anything else. However, while there Dana and I have grown to love the the thin crust taco pizza. My quest for a thin crust dough started as a way to make this taco pizza at home. In order to make our own, we first had to come up with a nice thin crust pizza dough. This dough is quick and delicious. No need to let it rise to long. Just my kind of last minute dough. This is not a traditional dough by any means, but it is fast and easy. Perfect for a 30 minute meal.
Thin Crust Pizza Dough
Preheat your oven fitted with a pizza stone to 500 degree Fahrenheit.
In a small bowl combine the yeast, sugar and warm water. Let sit for 5 -10 minutes or until nice and bubbly.
Add the dough hook to your stand mixer. Then in the bowl of your mixer, add the flour and salt. Then slowly pour in the yeast mixture. Mix to combine.
Once you have a nice ball formed, turn to medium/high and knead the dough for 5 minutes.
Turn the dough out onto a flour surface and divide into two.
Then using a rolling pin flatten the dough into a 12″ round pizza crust. This will take some energy to do. I found that it is easier to do in between two sheets of parchment paper.
Once the dough is flat, dock it with a fork or other pointed instrument. This will prevent it from forming huge blisters.
Place the dough onto a pizza peel and slide it into the oven. Blind bake the pizza crust for 5 minutes.
Remove the crust top with your favorite toppings and return to the oven for 5-7 more minutes or until the toppings are heated and the cheese is melted.

- 1/4 teaspoon sugar
- 1 packet active dry yeast 1/4 tsp
