I have made a nice selection of jello shots on this blog. Â First it was the orange slice jello shots and then it was the lemon drop jello shots. Â Well I have taken it to another level. Â Watermelon Jello Shots. Â Actually due to their sheer size, it is more like Watermelon Jello Cocktails. Â These were the best ever. Â Try to find mini-watermelons to do this. Â Otherwise, you need to make a lot of jello.
Watermelon Jello Shot
- 1 mini watermelon
- 3 small 3oz  packages cherry Jello, or watermelon if you can find it
- 1 1/2 cup vodka
- 2 cups boiling water
- 2 tbs chocolate sprinkles/jimmies
Since watermelons are so big, I used a Dulcinea mini-watermelon. Â It was perfect. Â A big thanks to Eric and Laura for finding such a perfect watermelon. Â I have been wanting to do this for a while, but didn’t want to make 3 gallons of jello.
Cut the watermelon in half lengthwise. Then using a spoon or melon baller, core out the insides of the watermelon. Keep the pulp to serve to guests.  Make sure not to cut through the rind.
Place the watermelon shells, rind side down in a 13×9 pan. Use aluminum foil to make bowls to keep the shells upright.
In a large bowl, combine the Jello with the two cups of boiling water.  Stir until the Jello is dissolved. Then add the vodka. Then pour the Jello into the shells until the liquid reaches the top.
Place the shells in the refrigerator for 1 1/2 hours. Â Then remove and sprinkle the halves with the chocolate jimmies. This will give you the appearance of watermelon seeds. Â Then place the halves in the refrigerator until firm. Â Roughly 2 1/2 more hours.
When ready to serve, cut the watermelon halves into wedges. Â It is best to do this with a warm sharp knife. Â Run a knife under hot water, dry it and then slice the halves into wedges.
Plate and serve. Â Make sure to make a ton of these.
Even people that hate Jello shots, love these as they are so easy to eat.
Note- I was unable to find watermelon jello and the melon jello that I could find was green. Â So I used cherry jello which worked great with the chocolate jimmies. Â Who doesn’t love chocolate covered cherries.

Jan – i got about 12 slices from the watermelon. The slices were quite large though. You could slice each one in half to get 24. That woukd make it more of a shot.

it might work to use some of the waterelon juice in unflavored jello mix. Or, a little bit of watermellon flavoring from a bottle (just like vanilla extract), with some red food coloring.

Everytime I've saw someone use vodka with cherry jello it came out tasting like cough syrup. But fear not for my friends and I found the solution. Black Cherry Rum. Mixes sooooo much better with any type of jello. Also, anyone ever thought of Making alcoholic Jello Jigglers? Same method of jello shots, but you just use 2 or 3 packets of jello. Then you don't even need the cups.

I made both lemon shots and melon shots with squeezed fruit, i ran the grinded pulp through a strainer, and I used white rum, since I don't like vodka, of course, i used regular unflavoured jelly, it doesn't come out as industrial tasting as regular jelly (ew) and i can control the amount of sugar, and it has no artificial flavors ofcourse, i'm gonna try it with the watermelon juice next… chocolate jimmies was a wonderful idea. love your stuff 🙂
@haddyDrow – I am glad that you like it. I was looking for something to be seeds and all I had in my cupboard was chocolate jimmies.
You could use unsalted watermelon or melon seeds (or even black/white sesame/raisins (without the peel ofcourse) maybe with thin caramel frosting, like in those old bars.
Those are all great ideas. I might have to try a couple of them.
