Roasted Pork Loin

 

Are you looking for a super quick and easy recipe for Valentine’s Day?  This one takes under an hour and tastes like it took ten.  It will perfume your house with the magical scents of garlic and rosemary.  The perfect recipe for Valentine’s Day.

 

Roasted Pork Loin – (From Bon Appetit, June 1999)

  • 4 large garlic cloves, pressed
  • 4 tsp chopped fresh rosemary or 2 teaspoons dried
  • 1 1/2 tsp coarse salt
  • 1/2 tsp ground black pepper
  • 1 tsp olive oil
  • 2 1/2 to 3 pound boneless pork loin roast, well trimmed

Preheat oven to 400°F.

Line a 13×9 pan with aluminum foil. Mix the first 5 ingredients in a bowl to a make a paste.

Rinse the pork loin and dry it off with a couple paper towels.

Rub garlic paste all over pork.

Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes.

Turn roast fat side up. Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer for a 2.5 pound roast and roughly 5 minutes for every half pound more.  Remove from oven; cover with aluminum foil and let stand 10 minutes.

Pour any juices from roasting pan into small saucepan; set over low heat to keep warm.

Cut pork crosswise into 1/3-1/2 inch-thick slices. Arrange pork slices on platter. Pour pan juices over.

This was a super quick and easy dish.  Took less than an hour and perfumed the house with a fabulous aroma.

Ingredients
  • 4 Cloves Garlic Pressed

  • 2-3 lbs Pork Loin Trim off excess fat

    I have used a recipe similar to this for many years. My addition was bacon strips across the top of the roast and a raft of cross weave bacon on the bottom. Keeps the meat moist and prevents burning due to high cooking temp. I use 425 F for 45 – 50 minutes. Meat thermometer @150-155. Never fails to come out juicy gender and tasty!
