We are on a Tex-Mex kick here on the blog and the next condiment that Dana and I wanted to make was Guacamole.  I love Alton Brown so I wanted to try out his version of the classic dish.  I must say that he hit a home run with it.  We used this recipe.  it was well balanced, not too spicy and downright delicious!
Guacamole
In a large bowl scoop out the avocado pulp. Â Then stir in the dried spices (salt, cumin and cayenne) and then mash it all together with a potato masher.
Juice a lime and pour it over mashed avocado. Â Fold it in. Â This will prevent the avocado from turning brown. Drain the excess lime juice from the avocado and reserve it.
Dice up the onion, tomatoes and seeded jalapeno. Â Add it to the avocado mixture. Â Then mince garlic and the cilantro and add it to the mixture. Stir.
Then add 1 tbs of the lime juice to the guacamole and stir.
Let the guacamole sit at room temperature for an hour to let the flavors meld. Â Serve with your favorite tortilla chips or alongside your favorite Tex-Mex.
I must say this was one of the best guacamole recipes I have tasted.

- 2 Plum tomatoes seeded and diced
- 1 small onion diced
- 1/2 jalapeno pepper seeded and minced
- 1 tbs chopped cilantro
- 1 clove garlic minced
