My In-laws neighbor “Pam”, makes the most delicious corn casserole. It is a mixture between corn bread and spoon bread. It has little corn kernels in it too. It is freaking delicious! I asked for the recipe and she was happy to share it. Thanks Pam! It is simple, easy and delicious! Plus, it is loaded with butter. I love butter. A must try side dish for any meal.
Pam’s Corn Casserole
Preheat your oven to 350 degrees.
In a large bowl, combine the melted butter, jiffy mix, can kernel corn, can creamed corn and sour cream.
Spoon the mixture into a 9×13 pan. There is enough butter in this that I have never had to grease the pan. It has always come out perfect.
Place in the oven and bake for 40 to 45 minutes or until the top is golden brown and dry.
Slice and serve!
A simple but delicious side dish that is reminiscent of spoon bread.
- 14.75 oz Creamed Corn 1 regular can
- 8.75 oz Kernel Corn 1 small can
- 8 oz Sour Cream
- 1 box Jiffy Corn Bread Mix
- 8 oz Butter, melted 1 stick

Mix the ingredients in a 9x13 pan.

Cook at 350 degrees for 40-45 minutes

When the top is golden brown and dry looking it is done
